choc cake v1
Based on
200g melted unsalted butter
200g chocolate 70%
200g ground almonds
200g sugar
4 eggs separated
Vanilla extract pinch of salt baking powder
Bake 160 degrees for 40 minutes
I guess you could use flour instead of ground almonds
You whip the egg separate to incorporate the air
Melt the chocolate and butter together
Separate the eggs and whip them with the sugar
Fold the chocolate and butter mixture into the whipped egg yolks
Then fold the whipped whites and almonds
Adjusted recipe
100g butter
2 x 50g moctezuma amargo (40%)
1 x 40g moctezuma semi-amargo (30%)
1 x 20g of 90% lindt
4 heaped tbsp muscovado sugar (60g sugar?)
100g flour
2 eggs
vanilla extract
